We all know that there are hundreds of different types of salads available today, some of these are healthier than others. Generally, when we think of a healthy salad we think of lots of lettuce, spinach, or kale as a key ingredient. Today we will look at a recipe for a great tasting and healthy salad that contains none of those. That salad is called a honey lime quinoa salad and it will change your views on what a healthy salad can be. This salad can be made it about 20 minutes and will make between 4 to six servings. Making it not only a healthy option but a very fast one that is easy to meal prep for the week with. This meal is so quick to prepare because it is mostly fruits that take almost no time to prepare and quinoa a very healthy grain that cooks in minutes. First thing you will need to do to create this delicious salad is to run to the store and grab your ingredients.
1 ½ cups of sliced strawberries
1 cup of blackberries
1 cup of blueberries
1 diced mango
1 cup of uncooked quinoa
¼ cup of honey (organic is the best)
2 tbsp. of lime juice
1 tbsp. of chopped basil
Once you have all your ingredients it is time to quickly prepare the meal. The first thing you will want to do is rinse and prepare the quinoa (it usually will tell you on the package how). Once the quinoa is done you can set it to the side to let it cool off. While it is, cooling grab a small container, and add your honey and lime juice and mix it. Set that aside and wash and prepare your fruits and put them into a large bowl. By now the quinoa should have cooled enough and can be added to your fruits and mix well. Now grab the honey lime glaze you made and drizzle it over your fruit salad and toss it to coat the salad. The salad is now ready to be enjoyed, you can garnish with the chopped basil or just leave it how it is.
